Culinary Poetry!

Signature Restaurant – Warsaw of the H15 Boutique Hotel is elegant and classy and is one of 53 Polish restaurants recommended in Michelin Guide 2017.  While staying at the H15 Boutique hotel I had the pleasure to dine here. As you walk in the dinning room you come across an interior with elements that distinguish the Signature….fancy columns, renovated Oswald chairs from the 50’s…an absolutely gorgeous dining room. The interior has a warm atmosphere and the service is superb. People refer to signature restaurants in general when they stand out for their exceptional cuisine. Well in this case, the ‘SIGNATURE’ restaurant of the H15 Boutique seems that justly deserves its name.

The Restaurant shares the beautiful glassed-in patio of the hotel and in the evenings there is live piano playing creating the unique atmosphere for a relaxing and romantic dining experience. I was here in the capacity of a food critic and had the pleasure of meeting the Chef and have a short chat with him.

My culinary journey starts with a welcoming glass of champagne. The executive Chef Wojciech Kilian brings himself the amuse bouche and we have a little chat. The quality and originality of his cuisine is confirmed by the distinctions and prestigious awards that Signature restaurant has received.

Modern International Fusion Cuisine

Starters

As a person Wojciech is very humble, charismatic and talented and prefers to create backstage without being a showoff. The Chef’s cuisine is inspired by the culinary arts of such masters as Thomas Keller and the Roca brothers. The bread (3 choices) was stunningly fresh and nicely presented, followed by a creative, light and refreshing amuse bouche.

The set Menu has Polish accents and sophisticated flavours

The zesty Gazpacho with crab over smoked freshwater prawns, sprinkled with cucumber sauce and ginger, slightly spicy had the perfect combination. Yummy!

The Scallop Potato Mousse had a mellow flavor and was presented in a unique manner on hot rocks. Both the two appetizers were fabulous. The Goat Tartare was refreshing and looked like art on the dish. Bravo Wojciech Kilian!

Soup

I loved the savory Gazpacho Soup with Crab. Rich in colour, texture and flavour. Big thumbs up!

Before the main course the savory intermezzo, light and refreshing was the unique palate cleanser. I loved the way it was presented.

Main Course

For the main course I could choose between the Lamb chop and the Brill. I opted for the fish as the lightest alternative. The succulent fleshy piece of Brill garnished with crispy Quinoa, sat on white Asparagus, paired with a Goat cheese mousse and white Radish. An exquisite choice, light and yummy. Thumbs up!

Dessert

The White chocolate Bavarese was divine with a creative and eye-catching presentation. Go for it, you will love it! Pairing dessert wine the Coteaux du Layon “Le Terriades”

The meal was of course accompanied with wine pairing. Some were better than others but overall I appreciated them all.

Verdict

Personally, I am very picky and I value good food. This was an unforgettable dining experience, well-balanced, creative and strategically portioned. The culinary courses I had at the Signature Restaurant were exquisite, prepared from pure ingredients with a refined intensity of flavours for the tongue and with an immaculate presentation. Finger licking good and super yummy! I can’t wait to be back!
